All Request Friday – The Squash Recipe

JW asked: “Post your favorite recipe using squash.”

Well, I’m not sure if this was a serious request or not, but I actually do have a favorite recipe using squash. At least, it’s my favorite that I’ve made. My mom, a typical southern cook, makes a mean squash casserole with summer squach, but I don’t have the recipe for that.

My favorite squash recipe comes from The Moosewood Cookbook. Actually, Moosewood was the first vegetarian cookbook I owned. (Now I have a whole shelf full of them.) I bought it when I decided to become a vegetarian, because I figured the best way to make the transition was to learn some good recipes. It served me very well in that sense.

The recipe is the “Comprehensively Stuffed Squash” on page 153 of the book. The sweetness of the winter squash (I use acorn squash) is a good match for the savory stuffing that includes onions, mushrooms, celery, sage, thyme, walnuts, sunflower seeds, raisins (optional, but I use them), bread crumbs and dried apricots. It’s what I used to make for Thanksgiving before I discovered Tofurky. I took it to potluck Thanksgiving dinners, just to be sure there was a vegetarian entree. It actually went over well with the meat-eaters too.

I hesitate, however, to print the recipe because it’s obviously covered by copyright. And while I’m sure Mollie Katzen is a very nice person who wouldn’t mind me sharing her recipe, I don’t know that the same can be said of her lawyers. I’m sure you can find a copy of Moosewood at a bookstore near you, and there you’ll find my favorite squash recipe.

    I was indeed very serious. Thanks! As a somewhat new full-on veggie, I take all the receipes I can gather.

    *grins* I guess that just means you’ll have to get your mom’s squash casserole recipe and post it, then.

    After her preserves, and hearing you talk about her cooking, I sure wish I could go eat at your parents’ house sometime, not that you’re any slouch in the kitchen yourself, darling. You make the BEST pie crust of anyone I know. I’ve never forgotten your quiche!
